Lasagna Pie
Servings 6

Ingredients
14.5 ounce can tomato sauce
½ teaspoon dried basil
1 teaspoon dried oregano
¼ cup fresh parsley
2 cloves garlic, minced
2/3 cup part skim ricotta
¼ cup Parmesan, shredded
1 pound ground beef
1 cup shredded mozzarella cheese
1 cup Wildtree Buttermilk Pancakes
½ cup milk

Method of Preparation
Preheat oven to 475°F. Combine tomato sauce, basil, oregano, parsley, and garlic to a saucepan. Season with salt and pepper if desired. Cover and cook over medium low heat for about 20 minutes to allow flavors to develop. Mix together ricotta and Parmesan; spread into the bottom of a lightly greased pie dish. Heat a nonstick skillet over medium high, add the ground beef and cook until browned and cooked through; drain. Stir in ½ cup mozzarella and 1cup prepared tomato sauce. (Reserve remaining sauce for serving). Spread mixture over the top of the Parmesan in the pie dish. Combine the Pancake mix and milk until blended. Spread mixture over top of ground beef in pie dish. Bake for 20-25 minutes or until a toothpick inserted into the middle comes out clean. Top crust with remaining ½ cup mozzarella cheese. Bake for another few minutes or until cheese is melted. Serve lasagna pie with leftover sauce and a side salad if desired.

*Note: 2 teaspoons Wildtree Hearty Spaghetti Sauce Blend can be substituted for basil, oregano, parsley, and garlic in tomato sauce.

Shrimp Fajita Bowl
Servings 4

Ingredients
3 cups water
1 ½ cups rice
¼ cup tomato paste
2 tablespoons adobo sauce (found with canned chipotles in adobo sauce)
1 tablespoon Wildtree Fajita Seasoning
2 tablespoon Wildtree Natural Grapeseed Oil, divided
1 pound shrimp, peeled and deveined
1 red onion, sliced 2 bell peppers, sliced
1 (15.5 ounce) can black beans, drained and rinsed
1 tablespoon fresh chopped cilantro
½ avocado, diced lime wedges

Method of Preparation
Prepare rice according to package directions. While rice is cooking prepare remaining ingredients. Whisk together the tomato paste, adobo sauce, and Fajita Seasoning. Heat 1 tablespoon Grapeseed Oil over medium high heat. Add the shrimp and about 1/3 of the tomato mixture. Sauté until shrimp are cooked through, about 4 minutes. Transfer to a plate. Heat remaining 1 tablespoon Grapeseed Oil in a large nonstick skillet over medium heat. Add the onion and peppers; sauté 5 minutes. Stir in the beans and remaining tomato mixture. Return shrimp to pan and cook until heated through. Serve shrimp mixture over rice. Garnish with cilantro, diced avocado and lime wedges.

Ingredients
1 ½ cups Wildtree Vegetable Bouillon Soup Base
2 tablespoons Wildtree Absolutely Onion Blend
1 tablespoon Dijon
1 tablespoon molasses
2 tablespoons ketchup
1 tablespoon brown sugar
2 (15.5 ounce) cans beans, drained and rinsed (we used red kidney and cannellini)

Method of Preparation
Preheat oven 350°F. Combine the Bouillon, Onion Blend, Dijon, molasses, ketchup, and brown sugar. Add to a baking dish along with beans. Cover with foil and bake 1 hour. Remove foil; bake for another 30-45 minutes or until sauce thickens.

Handy Veggie Pot Pies
Servings 8

Ingredients
1 tablespoon Wildtree Natural Grapeseed Oil
¼ cup carrots, diced
¼ cup celery, diced
1 medium russet potato, diced
1 package Wildtree Pot Pie Skillet Meal
½ cup plus 1 tablespoon water, divided
½ cup peas ½ cup corn
3 tablespoons light cream
1 box refrigerated pie dough (2 crusts)
1 egg

Method of Preparation
Heat Grapeseed Oil in a nonstick skillet over medium heat. Add the carrot, celery, and potato. Sauté 5 minutes. Add ½ cup water and Pot Pie Skillet Meal Seasoning. Stir to combine. Turn off heat. Add peas, corn, and cream. Stir to combine. Transfer to a bowl to cool. Preheat oven to 375°F. Carefully roll out pie dough. Use a 3 inch cookie cutter to cut out as many circles as you can. Gather left over dough and work into a ball. Roll out the dough and continue cutting circles. Repeat these steps until you have used up all the dough. (16 total) Top each circle of dough with about 1 tablespoon of the Pot Pie Skillet mixture. Whisk together egg and remaining water. Working with one pot pie at a time, brush the edge of the dough with the egg wash. Fold edges together forming a half circle. Use a fork to crimp the edges. Place pies on a parchment lined baking sheet. Brush tops with egg wash. Use a sharp knife to make small cuts on the tops of the pies. Bake for about 20-25 minutes or until golden brown. Serve hand pot pies warm. Can be served with gravy for dipping if desired.

Why did I become interested in a natural lifestyle?

wanttoknowmywhyAre you wondering how I became interested in a natural lifestyle? I guess you could say it started with my son. You see, he was officially diagnosed last summer at the age of 9 as being autistic and also has ADHD, dyslexia, dysgraphia, and whole bunch of other multi-syllable words. This amazing, sweet, and funny kid has really been dealt a crappy hand. When he was in kindergarten and first grade, I was receiving phone calls at work almost daily from his school. Either they needed me to come out and help get him calmed down or they needed me to take him home because there was NO calming him down. It was pure hell on him, his teachers, his principal and me.  This really put me on the firing line at my job. I worked for a large national corporation that didn’t care about your kids and the difficulty of raising a child with emotional and neurological issues. Needless to say, I ended up losing my job because of having to constantly leave to take care of Cody and because my sales numbers were falling. Thus began my life as a stay-at-home mom.

Ironically, once I lost my job, I now had the time to get him the help he so desperately needed. The breaking point came in September of 2011. I received a call from his school that Cody had hit his teacher, bit his principal and ran outside and was throwing rocks at the windows. Now, if you know anything about kids with the kind of issues that my son has, you know that anything can set off a meltdown. I was asked to come pick him up. When I got to the school, he was in the “quiet room” with the principal. He was stacking up the floor pads into a pile and threatening to set the school on fire. My wonderful son wanted to die in a fire. The principal said that he was being suspended from school for 3 days. I was mortified. I completely understood her reason… they could not risk him injuring a faculty member or another student. My fiancee and I took him to the nearest children’s hospital emergency room to have him evaluated psychologically. Of course, by the time we got him there, he was calm and no longer a danger to himself or anyone else and therefore, they couldn’t do anything. Instead, they had him sign a “No Harm Agreement.” Yep, my second grader signed a “contract” not to hurt himself or anyone else. He had absolutely no idea what it meant.

My then-fiancee and I got him into counseling. Cody was diagnosed there as suffering from anxiety and PTSD as a result of the abuse my ex-husband and Cody’s biological father had put us through. His counselor also said he thought we needed to get Cody tested for autism. Long story short, it took us about a year and a half to get with the right doctors who took the time to really be thorough and do things right and most importantly, they care about Cody. Cody was placed on Adderall and an anti-anxiety medication. Please don’t judge us for having him on this medication. I hate that he is on it, but it makes him able to behave better in school and get better grades because he can now focus and isn’t a constant disruption due to meltdowns.

We are able to enjoy life now! Sure, on a weekly basis, we are running to many appointments such as: counseling, group counseling (to help with social skills), speech therapy, occupational therapy and doctors’ appointments. But I am researching natural ways to help him. I know there’s no “cure” for autism, but if there’s something out there, whether it’s the type of food he eats, aromatherapy or herbal solutions, I want to find it. 

Another reason for my interest in natural products is MY health. I had a heart attack when I was 30. I had issues with gestational diabetes and high blood pressure in every one of my pregnancies. I would get migraines at least twice a month and the only thing that alleviated them were Imitrex injections. I suffered from Irritable Bowel Syndrome and chronic back pain, due to a car accident when I was younger and many falls. It hurt to stand, to sit, to walk.. High blood pressure came back with a vengeance. Depression has been a big part of my life since I was a teenager. I was taking as many medications as people in their 70s or 80s. And I was just barely 40! While I was still working at my corporate job, I wound up having to wear a halter monitor because of heart palpitations. Things were going downhill in a hurry.

Since starting my natural lifestyle, my blood pressure is the lowest in NINE years! Having a history of toxemia during all my pregnancies, I was told that I needed to be placed on meds for hypertension after my son was born in 2003. Now my blood pressure runs around 104/66. No more heart palpitations. I had a minor heart attack when I was 30 and the heart palps had come back with a vengeance when I was working at Verizon. No issues with my blood sugar either. My back issue rarely flares up anymore.

I still get headaches, don’t get me wrong. But nothing like the migraines of the past. Now when I get a headache, I rub a little peppermint oil on my earlobes. Buh-bye headache!

We also run a diffuser almost 24/7 that has an essential oil blend in it that helps with calming down and de-stressing. I see a huge difference in not only Cody, but all of us.

Cheesy Cauliflower Soup

Cheesy Cauliflower Soup
Servings 4

Ingredients
1 small cauliflower
1 russet potato, peeled
1 ½ teaspoons Wildtree Natural Grapeseed Oil
2 carrots, shredded
3 cups 2% milk
1 cup shredded cheddar (or Havarti)
2 teaspoons Wildtree Onion & Chive Blend
¾ teaspoon Wildtree Rancher Steak Rub

Protein: 18g

Method of Preparation
Cut cauliflower and potato into equal size pieces. Add to a pot with water. Cover and bring to a boil. Once boiling, remove cover and continue cooking 10 minutes or until tender. Drain and transfer to a blender. In the now empty pan heat the Grapeseed Oil over medium heat. Add the carrot and sauté 1 minute. Add the milk cook until hot but not boiling. Pour into blender with cauliflower and potato. If your blender has a plastic piece in the lid that can be removed remove it and cover the hole with a dish towel. This will prevent the steam from the hot soup from blowing the lid off. Puree soup to desired consistency. Pour blended soup back into pan and stir in cheese, Onion & Chive Blend, and Rancher Steak Rub. Cook over low heat until cheese is melted.

Wicked Slow Cooker Chicken with Orzo and Herb Roasted Potatoes

Serves 6

Wicked Chicken with Orzo
6 lbs of chicken breasts, boneless and skinless
1 bottle of Wildtree Wicked Slow Cooker Sauce
1 box of Orzo

Put chicken in slow cooker with all of one bottle of Wildtree Wicked Slow Cooker sauce. Cook on low for 8 hours. One hour before serving, add the box of orzo to the contents of the slow cooker. Re-cover. Stir once or twice before serving. Orzo will absorb any extra sauce.

Herb Roasted Red Potatoes
12 small red potatoes, cut into wedges
1 medium onion, cut into 6 to 8 wedges
1 tablespoon of Wildtree Tuscan European Dipping Oil
1 teaspoon of Essence of Emeril
1 teaspoon of rosemary leaves
1 teaspoon of Wildtree Scampi Blend
1/2 teaspoon of garlic powder
Wildtree Natural Grapeseed Oil

Preheat oven to 425 degrees. Oil a shallow baking pan with Wildtree Natural Grapeseed Oil.

Combine potato wedges, onion wedges and seasonings in a large bowl. Toss to combine and coat the potatoes and onions. Once combined, add all ingredients to the baking pan. Roast in oven for 45 minutes, turning occasionally, until potatoes are tender and golden brown.

Multigrain Gluten Free Bread
Servings 16

Ingredients
1 package Wildtree Gluten Free Bread
½ cup oats (certified gluten free)
½ cup sunflower seeds
2 tablespoons flax seed
1 ¼ cup milk, divided 1 (0.25 ounce) packet or 2 ¼ teaspoons active dry yeast
3 large eggs
2 ½ tablespoons Wildtree Natural Grapeseed Oil
3 teaspoons apple cider vinegar

Method of Preparation
Heat oven to 375°F and grease a 9 x 5 inch loaf pan. Heat ¼ cup milk to between 75°F and 90°F and stir in yeast to activate. Combine Bread mix, oats, sunflower seeds, and flax seeds in a large bowl. Add remaining milk, eggs, Grapeseed Oil, vinegar, and yeast mixture and beat with an electric mixer on medium speed for 2 minutes, scraping the bowl occasionally. Pour into prepared loaf pan and let rise for 20 minutes. Bake for 35-40 minutes until golden brown.
