- 5 lb of skinless boneless chicken breasts
- Sliced pepperonis
- 16 oz of Italian shredded cheese
- 2 jars of marina or pizza sauce
- Italian seasoning
- Garlic powder
Preheat oven to 425 degrees.
Clean each chicken breast and butterfly it (cut horizontally in half leaving it attached on one side). Open the breast so it lies flat. Layer on each half the following: pepperoni slices, cheese and season to taste with garlic powder and Italian seasoning.
Fold each breast so it forms a “sandwich” and place in a casserole dish. After moving all the chicken over to your casserole dishes, layer more pepperoni and cheese on top of each breast. Cover with marina or pizza sauce. Sprinkle with more cheese and pepperoni.
Bake uncovered for 30 minutes at 425 degrees. Check for “doneness” by cutting down through one of the breasts.
Can be served over cooked pasta.
