Here’s a heart smart meal for everyone! And to make it even better, it’s quick to make! Great for those of us who are trying to lower our cholesterol!

Patty’s Chicken Salsa with Quinoa


3 lbs of boneless chicken breasts

Taco Seasoning (I make my own and store it in a small mason jar! Click here for that recipe.)

Make your own salsa! Here’s what you need:

1 packet of quinoa

sour cream

shredded Mexican cheese blend

(I take a shortcut with the ingredients. Rather than make my own salsa, I cheat and buy premade Black Bean and Corn Salsa.)


Slice the chicken into bite-sized pieces and cook thoroughly in a skillet with grapeseed oil and taco seasoning. Once the chicken is cooked throughout, reduce heat and add your salsa, cover and simmer.

In a separate pot, cook the quinoa as directed on the package. (It’s typically add this much water to a pan and bring to a boil. Add quinoa, reduce heat and cover and cook 15 minutes or so, stirring occasionally. I typically get flavored quinoa, either garlic or with black bean or veggies.)

Serve as shown. You can add a small amount of sour cream and shredded cheese, if you’d like.

This also is amazing on flour tortillas, served as burritos!
