Microwave Hawaiian Chicken and Rice

 

Here’s your NO DEFROST recipe!
Are you like me and always forget to defrost the chicken?!! Well if you have the Pampered Chef Rockcrok or Deep Covered Baker, you can still get dinner on the table in 30 minutes!

Microwave Hawaiian Chicken & Rice
3-4 skinless chicken breasts, frozen 
1 bottle of Sweet and Sour Sauce
1 red bell pepper
1 small onion
1 can of pineapple chunks, drained
1 cup of instant rice


Place frozen chicken breasts into the Rock Crok and add the Sweet and Sour sauce. Microwave covered on high for 15 minutes. Meanwhile, dice the red bell pepper and onion on a Flexible Cutting Mat using the 5″ Santoku Knife. Remove the baker from the microwave & chop chicken with Salad Choppers. Add the rice, bell pepper and onion and stir. Cover & microwave for 15 more minutes. Drain pineapple using small Stainless Mesh Colander. Fold in pineapple before serving.
