2 containers of ricotta cheese
2 cups of shredded parmesan
2 cups of shredded mozzarella
2 lbs of ground Italian sausage
1 lb of large shells
This is enough for 2 9 x 13 casseroles. Preheat oven to 350 degrees.
Brown the sausage (I add Italian seasoning and garlic) while boiling the water for the shells. Drain any grease off the sausage and add to a medium mixing bowl. Add the ricotta, parmesan and mozzarella and stir.
After the shells have cooked, drain and rinse in cold water to stop the cooking process. Spray the casserole dishes with cooking spray. Then it’s shell-stuffing time! Take a tablespoon and stuff the sausage cheese mixture into each shell.
Once all the shells are stuffed, pour your favorite pasta sauce over them. Bake at 350 for 25 minutes. You can sprinkle cheese on top once the shells have baked for 20 of the 25 minutes.
