Raspberry Dessert Bread
4 oz Cream Cheese (softened)
Â½ C Butter (softened)
1 C Sugar
1 tsp almond flavoring (or vanilla)
2 C Flour
Â½ tsp baking soda
2 tsp baking powder
Â½ tsp salt
Â½ C Buttermilk
1 Â½ C raspberries or marionberries (fresh or frozen)
Mix cream cheese, butter and sugar until fluffy. Add in eggs and flavoring.
In a separate bowl mix flour, baking soda, baking powder, and salt. Combine both mixtures until blended. Add buttermilk without overmixing. Chop your berries (raspberries, marionberries, strawberries) making sure you rinsed and dried first.
Fold berries into mixture carefully. Dough will be thick.
350 degree oven ~ 50 to 60 minutes
9 x 5 greased and floured loaf pan
You can put a â€œglazeâ€ on after if you like. I use this one:
2 Tbls melted butter
1 C powdered sugar
2 Tbls milk
Â¼ tsp almond flavoring (or vanilla)
